Thanks to this delicious spinach and rice pudding you can get a lot of vitamins and minerals, as well as prevent cardiovascular diseases and improve intestinal transit thanks to its fiber content. If you are tired of preparing the same recipes and want to surprise your guests with a different dish, prepare this exquisite spinach and rice pudding.
Ingredients
200g fried tomato sauce
200ml of evaporated milk
250g of spinach
150g of rice
100g grated cheese
150g of bacon or smoked bacon
3 eggs
Salt, ground black pepper and nutmeg
Step-by-step elaboration
1. Put water with salt in a pot and bring to the fire. When it boils, pour the rice and cook for at least 15 minutes. Drain and reserve.
2. Wash the spinach and boil in salted water for at least eight minutes. Drain very well to remove all water. Shred them finely.
3. Cut the bacon or smoked bacon into cubes and fry in a frying pan without adding fat.
4. Add the spinach and saute for a few minutes.
5. Mix rice well cooked with spinach and bacon. Add the beaten eggs, evaporated milk and grated cheese. Season with salt, pepper and nutmeg.
6. Pour spinach flan into a round, buttered, pan and cook for 35 minutes in a mild oven.
7. Let the spinach pudding cool and unmold. If you want you can use the hole to fill with rice with beaten egg.
