Ingredients
1 whole chicken
Rosemary branches
3 tablespoons of Dijon mustard
Olive oil
Elaboration step by step
1. Rinse the chicken thoroughly and dry it with paper napkins.

2. Pass the Dijon mustard through the chicken, both outside and inside, and place it on a refractory cookie sheet greased with olive oil.

3. Place some rosemary branches on top and bake the rosemary chicken covered with plastic wrap for 50 minutes at 180 ° C. Then uncover and let cook for about 10-15 minutes to take a golden color.

Accompaniment
Peel potatoes and cut into slices of equal size. Rinse them well and place them in a bowl. Dry them with a clean cloth or paper napkins and pour them olive oil and salt. Stir with your hands so that the potatoes are impregnated with oil. With this trick you will achieve that the potatoes are baked well and remain golden and crunchy. Put the potatoes around the raw chicken, without adding more oil, and bring to the oven. When they are golden brown, remove them.

Chicken cooking times
The cooking time of a whole chicken may vary according to its weight, since a 4-pound bird (about 1.6 kg) will require at least 75 minutes in an oven at 175 ° C, while an 8-pound chicken ( about 3.2kg) will take between 3 and 4 hours of cooking. Also, if you fill the chicken, you must add another 15-30 minutes.
