Ingredients
300g of rice
50g of mozzarella cheese
100g grated Parmesan cheese
40g of butter
1 onion
1 tablespoon of olive
2 eggs
Salt and ground black pepper
3 tablespoons chopped fresh parsley

Elaboration step by step
1. For the recipe of rice croquettes with cheese, the first thing you should do is peel the onion and finely chop it to sauté it in 20g of butter until transparent.
2. Incorporate the rice and cook for one minute. Add a liter of boiling water and cook until ready. Remove every so often and drain.
3. Mix and add remaining 20g of butter, chopped fresh parsley, grated Parmesan cheese, salt and ground black pepper. Let it cool.
4. Form between 15-20 meatballs with the cold rice with your wet hands and put a bucket of mozzarella cheese in the middle of each of them.
5. Close well, go through beaten egg and flour. Reserve the rice and cheese dumplings in the fridge.
6. Fry the rice and cheese croquettes in plenty of oil until golden brown and remove on absorbent paper.
